Ooey, gooey, chewy, Oatmeal-Craisin-Pecan Cookies are so good and super-easy to make! Original recipe adapted from Quaker Oats.
1/2 cup butter + 6 tbls butter, softened
3/4 cup packed brown sugar
1/2 cup granulated sugar
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt (optional)
3 cups oats (quick or old-fashioned, uncooked)
1 cup craisins
1 cup chopped pecans
Heat oven to 350.
Beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla, beat well.
Add flour, baking soda, cinnamon and salt; mix well Add oats, craisins and pecans; mix well.
Drop dough by mounded tablespoonfuls on ungreased cookie sheets.
Bake 8-10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely.
Store tightly covered.
Yield: approx. 4 dozen
