Zucchini Cake with Cream Cheese Frosting

Delicious, moist cake.  Perfect way to use up some summer fresh zucchini!


2 cups all-purpose flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
3 tsp. ground cinnamon
3 eggs
1 cup vegetable oil
1 1/2 cups white sugar
2 cups grated zucchini
2 tsp. vanilla extract
1 cup chopped walnuts or pecans

Preheat oven to 350 degrees. Lightly grease one 13 x 9-inch baking pan.

Combine eggs, oil, sugar, grated zucchini, and vanilla. Beat until well mixed. Stir in the flour, baking soda, salt, baking powder, and cinnamon and mix until just combined. Stir in the chopped nuts. Pour batter into prepared pan.

Bake at 350 degrees for 45 minutes.

Cream Cheese Frosting Recipe:
1/4 cup butter, softened
4 ounces cream cheese, softened
2 cups confectioners' sugar
1-2 tsp cream or milk
Beat well until of spreading consistency.
